Fennel and Apple Salad
This is a very lovely rendition of one the many variations on the refreshing apple-and-fennel combination. I also like to add radicchio to the salad, a trick I first learned at Sweet Grass Cove in northern Minnesota – the red of the leaves rounds out the colors on the plate and makes for a beautiful presentation. When using Earth First Farms apples, we recommend an Ida Red or an Empire for this salad.
